Ingredients

1 1/2 pounds boneless skinless chicken breasts
1/2 teaspoon salt
1/2 cup cornstarch
Vegetable oil, for frying, as needed
1/4 cup chicken broth or stock
2 tablespoons orange marmalade
2 tablespoons soy sauce
2 cloves garlic, minced
1 inch fresh ginger, minced
1 teaspoon Sriracha sauce
2 teaspoons sesame oil
1 green onion, chopped
1/4 cup orange zest

Instructions

1. To begin, slice the chicken into 1” cubes and season with salt. Next, toss the chicken in the cornstarch coating each piece evenly. Heat about 1” of vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through. Place the cooked chicken on paper towels to absorb the excess oil.

2. In a separate bowl, whisk together the chicken stock, orange marmalade, soy sauce, garlic, ginger, sriracha, and sesame oil. Have the green onion and orange zest ready to go as well.

3. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Add the marinade mixture to the pan and cook, stirring constantly, until it begins to thicken. Next, add the chicken, green onion and orange zest and fold everything together to coat. Cook for two minutes more, or until everything is heated through.

4. Serve the orange peel chicken over steamed white rice and top with a sprinkle of sesame seeds for garnish. Enjoy!
